Pickled Onions

My partner absolutely LOVES this recipe. The great thing about them is you can customise it by adding different herbs and flavours so suit your taste buds!



1kg small pickling onions, peeled and left whole

1/2c of salt

5c of water

1L of malt vinegar

1/2c of white sugar

1T of pickling spice



Put the onions, salt and water in a large bowl. Cover and stand over night. The next day, drain the onions and rinse well under cold running water. Pack them into 500ml sterilised jars. Combine the remaining ingredients in a large saucepan. Stir over a medium heat as you bring the mixture to a boil. Turn down the heat and simmer for 10 minutes.

Cool then strain the cold vinegar mixture over the onions to cover completely. Seal the jars.


Makes 3 jars
